We now have available traditionally and naturally reared hill bred mature lamb from the uplands of Northumberland. Mature lamb is meat from hill breed sheep, such as the Blackface, Swaledale and Cheviot Shearlings and only sheep aged between 18 and 24 months of age are selected, to produce a unique taste experience.
Mature lamb has a greater depth of flavour than lamb, which is normally defined as meat from an animal before its first teeth have started to erupt (usually at 12 months), however it is also younger than mutton, which is generally classed as meat from a sheep that is more than two years old.
Mature lamb retains all the tenderness of lamb, but has more flavour and much greater versatility, lending itself to both fast and slow cooking methods.

We are able to supply the mature lamb as whole or a half, bone in or bone out, or a combination of both. A whole mature lamb will weigh from 20 - 25kgs (bone in), or 12 - 15kgs (fully boned out).
We can also supply individual cuts to suit your specific requirements or a special combination pack comprising a selection of cuts. Combination packs will be approximately 4kgs (bone out) and will comprise a combination of shoulder joints, leg joints, loin, leg steaks, cubed and mince as available.
The mature lamb will be vac packed to ensure freshness and dispatched for home delivery in chilled boxes. Please contact us for availability details . Delivery will be within 3 days (all deliveries will have to be signed for).
